Bacon and Tomato with Rice (Serves 6-8) By:contributor Ingredients 5 slices bacon, diced 2/3 cup chopped green pepper 1/2 cup chopped onion 1 clove garlic, minced 3 large tomatoes, peeled and cut into eighths 3 cups cooked rice 1/4 teaspoon ground black pepper Method 1. Cook bacon until almost crisp in large skillet over low heat. Pour off fat, return 2 tablespoons drippings to skillet. Add green pepper, onion and garlic, cook until tender crisp. 2. Stir in tomatoes, rice and black pepper, heat thoroughly. |
